Weight Watchers Mashed Potato Bake

This Weight Watchers Mashed Potato Bake is simple, easy, and delicious! This WW recipe is with points for blue plan, green plan, and purple plan for you to stay on track in a delicious way!

Wash and peel the potatoes well. Cut them into bite sized, uniform pieces. Boil potatoes in big pot until tender. Drain, mash, and set aside.  

Wash and cut up mushrooms into bite sized pieces. Dice onion. Melt butter in skillet and cook mushrooms and onions until tender.

Mix the sautéed vegetables with the mashed potatoes. Add sour cream, salt, and pepper. Mix well and heat through.  

Spread the mixture into a greased 9x13 pan. Smooth out to fill all sides of pan. Sprinkle shredded cheddar cheese over entire dish. Bake 350 degrees for 20-30 minutes or until bubbling.

Remove from oven and let stand 5 minutes. Cut into 10 equal slices. Serving size is one slice.  Enjoy! Swipe up to get the full recipe!
