These Weight Watchers™ Friendly Chicken Quesadillas are just that. 

Throw the ingredients together and you’ll have a filling and delicious meal in no time. 

Quesadillas are really a genius invention. I mean…cheese and stuff melted in between two tortillas? Yes!

I remember eating quesadillas for the first time at a restaurant in my hometown. I think I was probably 12. 

I loved how simple it was and no matter what quesadilla I ordered it was always delicious. 

Weight Watchers Chicken Quesadillas

My favorite is a quesadilla at a local Mexican restaurant where I live. It’s called “Quesadilla Grande”.

You guys. This quesadilla is so delicious. BUT…I don’t even want to know the calorie or fat count. 

It’s made in this ginormous flour tortilla, filled with grilled steak, mushrooms, onions, and cheese sauce. 

Cheese sauce that is straight from heaven. 

You know what I’m talking about. That white cheese dip you can order? Yeah, they pour that all over this quesadilla. 

So, I was at home the other day and wondering what I could make quickly because we had to get to my stepdaughter’s softball game in an hour. 

I remembered I had some flour tortillas and some shredded rotisserie chicken in my fridge. 

I threw these ingredients together and the whole family loved it!

If you have picky eaters, the best part about quesadillas is that you can fill them with just about anything. 

If you’re counting points, there are so many zero point foods you can add to the them!

I didn’t have any fresh mushrooms on hand, but next time I make these, you better believe they will be filled with them!

These Weight Watchers™ Friendly Chicken Quesadillas and fill up with points if you add the wrong ingredients. 

Make sure you get the fat free flour tortillas.  There’s also a lot of different tortillas out there you can choose from.

Pick what you like, but remember, it may change the point value. 

The cheese is a big thing you need to watch too. 

I used fat free shredded mozzarella cheese from Walmart, but you can put any cheese in. It will most likely change the point value of this recipe, though. 

So, with that said, the things that make this are the tortilla and cheese. Everything else is zero points!

If you change the recipe, just make sure you log into your Weight Watchers™ account and figure out the proper points value per serving. 

Each quesadilla includes two tortillas so one quesadilla is a serving. 

I made these in a frying pan on the stove, but if you have a quesadilla maker, you can use that at well. 

It should be noted that these are the smaller tortillas, not the 10 inch. 

Weight Watchers Chicken Quesadillas

I used La Banderita carb counter tortillas. These are also great for a quick low point sandwich for lunch. 

I ate mine with salsa (another zero point winner). 

My family liked sour cream with theirs as well. 

Totally up to you how you serve it, just remember to count the points!

I sprinkled some chopped cilantro on the top of mine and it was so good! Green onions would work well too. 

Weight Watchers™ Friendly Chicken Quesadillas

Serving size = 1 quesadilla (two tortillas filled with ingredients)

Ingredients

2 of these (click here)

1/2 cup fat free shredded mozzarella cheese – divided

1/2 cup or more (to your liking) cooked, shredded, chicken breast

1/4 cup green peppers, chopped

1/4 cup red peppers, chopped

4 green onions, chopped

Chopped cilantro for garnish

Non-stick cooking spray (this is my favorite, it doesn’t have a chemical taste)

Directions

Over medium high heat, heat a skillet sprayed with non stick cooking spray.

Or, place on a quesadilla maker like this one I have.

Place one tortilla on the pan once it’s heated.

Top with a layer (1/4 cup) of cheese. 

Top cheese with chicken, onions, peppers and beans. 

Top that with the last 1/4 cup of cheese. 

Place the second tortilla on top. 

Cook each side about three minutes or until golden brown and heated through. 

Remove from skillet when cooked to your liking. 

Cut with a pizza cutter or a knife. 

Garnish with chopped cilantro.

I use La Bandarita brand carb smart whole wheat wraps, fat free mozzarella, white meat chicken, fat free salsa, and a dollop of fat free yogurt instead of sour cream. They are so good. I find the wraps at Walmart or Meijer.
