Weight Watchers Lasagna Skillet

I’ve loved lasagna for many years.

It’s so cheesy and gooey and hot, it’s a perfect comfort meal.

As a kid, I wasn’t a very big fan of lasagna. 

As an adult, I now feel sorry for my child self, who missed out on the many delicious lasagna dinners my mother made. 

My typical lasagna recipe is made completely from scratch and takes hours to make.

It’s definitely restaurant quality, but it’s also not a meal that will help you keep your girlish figure.

Speaking of girlish figure, I’m still truckin’ along on my W.W. journey.

This semester has been the hardest one I’ve ever taught, and I have to admit, I’ve slacked on tracking everything I’ve eaten and the scale has been proving it.

It’s been stressful and tiring, with a lot of random stuff going on in my personal life as well. 

On top of teaching, we had a lot of places to be during the week and I had many meetings to attend, as well as studying for and passing (yeah!) my social work boards.

I haven’t gained any weight, but it’s barely moving in the direction I want to go.

I teach in the evenings and that’s really the only time I have to exercise.

I do walk back and forth in front of the classroom a lot, does that count as exercise? 😉

I’ve tried exercising at home but my toddler ends up jumping on me while I’m on the floor doing sit-ups and such.

It doesn’t really make for a great workout environment, although it’s cute.

Anyway, after a long day of toddler activities and teaching at night, I’ve been craving comfort food.

I’m sure the cold weather doesn’t help either, but this skillet did the trick!

I especially liked that I didn’t have to boil any noodles beforehand.

It’s a little hard to break up the noodles in The Best Weight Watchers™ Friendly Lasagna Skillet but hey, it’s burning extra calories right?

I’ve gotta fit in my exercise somewhere.

I have to say that the fat free ricotta cheese really added that extra “mmm” in this recipe.

The creamy texture of the cheese really made me feel like I was eating something worth a lot more points.

The best part about this recipe is that my family loved it.

My husband didn’t even know it is a healthier version, and, went back for seconds!

The Best Weight Watchers™ Friendly Lasagna Skillet is only 2-5 points per serving (depending on your plan), compared to a whopping 29 points for a restaurant lasagna serving!

Now that’s what I call a win!

Another great thing about this dish is that it only takes one pot to make!

You don’t have to get a bunch of dishes dirty, or a lasagna pan.

Baked on cheese and noodles are a thing of the past!

This recipe is easy to make, delicious to eat, and simple to clean up!

The Best Weight Watchers™ Friendly Lasagna Skillet

Points Values:

WW Personal Points™ = 3 Points per serving

Blue Plan = 4 Points per serving

Purple Plan = 2 Points per serving

Green Plan = 5 Points per serving

Makes 6 (3/4 cup) servings

Ingredients:

  • 4 ounces (about 8 noodles) whole wheat lasagna noodles
  • 1 pound 99% fat free ground turkey breast
  • 1 (28 oz) can of this ingredient 
  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1 1/2 teaspoons minced garlic
  • 1 (15 oz) can tomato sauce
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon of this seasoning blend
  • 1 cup fat free ricotta cheese

Directions:

  1. In a skillet over medium high heat, add olive oil, onions and garlic. Sauté until fragrant.
  2. Add ground turkey. Break meat apart and cook until no longer pink.
  3. Break up noodles into 2 inch pieces and add to meat.
  4. Pour crushed tomatoes and tomato sauce into skillet, covering noodles.
  5. Bring to a boil, then reduce heat to medium low and cover.
  6. Cook until noodles are al dente, or about 25 minutes.
  7. Add Italian seasoning, salt and pepper to taste, and Parmesan cheese. Stir.
  8. Cover and let simmer for 5 more minutes.
  9. Remove from heat, serve immediately with one tablespoon of fat free ricotta cheese (0 points).
  10. Sprinkle chopped basil over the top.
