This recipe is so simple, and guess what…it’s zero points per serving (except for green plan)!!!

 

Weight Watchers Mexican Chicken in tacos

We have a few Mexican restaurants where we live, but I never know how much of each ingredient they are using, and that makes it hard for me to know exactly what’s in my food so I can be conscious of the calories, fat, and most importantly, points!

One of my favorite types of food is Mexican food. 

I get random Mexican food cravings at any given time. 

I’m obsessed with the spices used in the cooking, namely cumin.

Yum!

For these reasons alone, I love cooking at home. 

I’m always on the hunt for delicious, easy recipes that are healthy to make and eat at home. 

My mother in law is Mexican, so she always cooks up delicious Mexican food. 

I’m trying to learn the recipes she makes so I can cook them for our family as well. 

Right now, the only recipe I know how to cook is her Mexican rice recipe.

The first time I ate her rice I fell in love with it. 

It is so much more delicious and flavorful than the pre-made rice you buy at the store or the rice that you can get at the restaurants.

With this zero point chicken, the rice would make a great addition to the meal.

I love that the program allows us to eat chicken for zero points, but I have to admit, I’m getting really sick of it. 

Since I don’t eat fish or seafood (so don’t expect to see many recipes on here including things that swim or breathe under water), I eat a lot of chicken. 

That’s why I’m excited to share this recipe with you. 

I know many of you out there in Weight Watchers™ land are also sick of chicken as well, and I’m here to help!

Weight Watchers Slow Cooker Mexican Chicken toppings

We have eaten the chicken in flour and corn tortillas as tacos, but I’ve also had the chicken on top of my salads. 

I add a little corn and black beans to the salad and it’s like a taco salad!

I also like to squeeze fresh lime juice all over these babies…it’s so delish!

When I made this low calorie slow cooker Mexican chicken for the first time, I was expecting it to be another chicken recipe that was so-so and and left me longing for Mexican food from the restaurant. 

I was wrong.

This chicken turns out so moist and flavorful that I can’t even put into words how much I love this!

It’s so versatile too. 

Like I said, I like to eat it on salads and in tacos, but you can eat it alone or place it in a wrap, sandwich, mix it in with your eggs for breakfast, you name it. 

The possibilities are really endless with this recipe.

While the chicken itself is good, I think adding the fresh lime juice and cilantro really amp up the flavor. 

There’s something about the flavor of cilantro and lime that remind me of summer, and that’s always a good thing.

I have stopped adding cheese to my salads and tacos because I can’t really taste it and it just adds calories and fat which adds points. 

At 23 points a day, I have to be sure that what I put in my mouth is worth it, and I feel like I don’t miss the cheese.

Yes, the girl from Wisconsin just said that she doesn’t miss the cheese. 

You read that correctly. 

This recipe serves about 6 people. 

My husband eats more, I eat less per serving, so I’m going to be safe and say 6 people can eat from this meal at about 2/3 cup of meat.

Remember to count the points for tortillas or toppings!

Serves 6

Serving size is 2/3 cup.

Low Calorie Slow Cooker Mexican Chicken

Ingredients:

4 large chicken breasts, boneless and skinless
2 jalapeno peppers, chopped (optional)
1/2 cup roasted red peppers in water, diced (I prefer these here)
1 small can of diced green chiles 
1 1/2 TBS taco seasoning (I like this reduced sodium one here)
2 tsp garlic powder
black pepper to taste
fresh cilantro for garnish
fresh lime for garnish

Directions:

Place chicken in crock pot.
Add all ingredients except for cilantro and lime.
Toss to cover chicken with ingredients.
Cook on low for 8 hours or until chicken is completely cooked.
Use fork or electric mixer to shred chicken, or cut into bite sized chunks.
Mix well with mixture left over in slow cooker.
Chicken is now ready to eat!

I eat this in many ways, like I said.  I prefer the chicken in chunks instead of shredded, but it’s all up to you!

Hi Lynda, I think this freezes just fine. I use gallon size freezer bags and I make sure as much air is out of the bag as possible before I freeze it. I hope you enjoy it! Thanks for reading! Carissa
