But you aren’t.
This recipe is delicious and filling!
Boneless, skinless chicken breasts are low points on the Weight Watchers™ program, so I eat a lot of it.
The only thing about eating a lot of something is that it can get sickening.
Eat some chicken!
It’s filled with protein and it’s low points!
That’s great and everything…until you’re in the 4th month of the program and the thought of chicken makes you want to chew on cardboard instead.
The trick is to switch it up and keep it interesting.
I’m all about finding ways to spice up and switch up the flavors for chicken so I can stay on this program successfully.
I’m not a fan of fish and seafood, and turkey, well, not a fan of either so, here we are, with another chicken recipe.
Low points values, delicious-ness and filling are all three things I love to hear.
Especially when they are used together.
Enter my recipe for Weight Watchers™ Friendly Chicken Cordon Bleu.
My parents never made chicken cordon blue when I was young.
I really didn’t know what it was until college when I went to dinner with my boyfriend at a restaurant to celebrate something.
I can’t remember what we were celebrating, but it must have been something special because we never had money to spend, so I know it had to be something special.
Anyway, I remember asking the server what was in chicken cordon bleu and she explained it in a way that sounded so yummy.
Ham and chicken together?
You all know how I feel about chicken.
I appreciate chicken.
I really do.
I appreciate it’s protein and is versatility.
I appreciate mostly, that’s its low points.
But, we need to keep it interesting.
Because it’s low points, I eat a lot of it.
I need to keep reinventing the chicken recipes so that I don’t get board.
Me = bored lately.
So, Weight Watchers™ Friendly Chicken Cordon Bleu was born.
I put this recipe together after seeing an advertisement on TV about some chicken cordon bleu at a local restaurant.
I thought, “Hey, I haven’t had that in a long time. I’m going to try and make a lightened up version of it!”
So, after looking at some of the recipes, I realized that it’s a really fatty dish.
Many of them included butter, flour, and mayonnaise.
Ham itself isn’t the best choice of lean meats.
I don’t even know if it’s considered a lean meat, but I do know it’s delicious.
It’s my favorite meat right next to beef.
When I made this Weight Watchers™ Friendly Chicken Cordon Bleu recipe, I found it relatively easy and of course it turned out to be really yummy.
Using the deli sliced ham was easy and something that I already had in the refrigerator for lunches.
Chicken cordon bleu usually calls for Swiss cheese.
I like Swiss cheese but I didn’t have any, so I used what I had.
You can switch out to Swiss cheese if you prefer, but remember to count the points for it.
I love the creamy sauce in this Weight Watchers™ Friendly Chicken Cordon Bleu recipe.
It really adds that special something to the dish.
It makes you feel fancy.
When I made it, it turned out all fancy looking.
Here’s me with my pinkie finger up. I’m fancy.
So, this Weight Watchers™ Friendly Chicken Cordon Bleu recipe requires a bit of pounding of the chicken breasts.
It’s not ideal, but it’s not that difficult.
You can also take your frustrations out on the chicken AND burn some extra calories while doing it.
I am putting 4 ounce chicken breasts in the recipe, but since chicken is really low points, I don’t think it will matter if they are a bit bigger than that.
The sizes of chicken breasts vary so much, so this is helpful.
I just want to point out that I filleted the chicken breasts that I had and pounded out each half.
So don’t buy 8 breasts, buy 4 and cut each in half to pound out.
Even though I used shredded mozzarella in this recipe, I think next time I’ll try using a piece of string cheese.
I saw that in a few other recipes for chicken cordon bleu and I thought that might make it even easier.
I’ll update this post when I make it that way.
I had the heart healthy version of cream of chicken soup in the pantry so I used that.
However, I bet this would be equally delicious with cream of mushroom soup.
Maybe it’s the Midwesterner in me, but cream of mushroom soup is every meal’s friend.
Me + mushrooms = love forever.
The lemon juice I used came from the refrigerated lemon container; it wasn’t real, freshly squeezed lemon juice.
But I didn’t have any at hand, and I’m trying to use what we have here.
When I tasted the sauce, I thought it tasted a little “thick” (best way I can explain it).
So I just squeezed a half of a medium lemon in the sauce and that made a world of a difference.
Plus, my husband and I love lemon chicken, so I thought it couldn’t hurt it.
I think that the cornflakes stuck nicely to the chicken.
If you’re a fan of a typical egg wash though, feel free to use it for 0 added points.
Overall, I’m happy with how this recipe turned out.
Feel free to add different spices to the corn flake mixture.
It would be good with garlic powder, onion powder, you name it!
This recipe is 4 points per serving.
One serving is one chicken breast half, served with 2 tablespoons of the sauce mixture.
This recipe makes 8 servings.
Weight Watchers™ Friendly Chicken Cordon Bleu
- 4 boneless, skinless chicken breasts (8 halves)
- 8 slices Hillshire Farm Deli Select Ham, thick slices
- 1 1/2 cups shredded fat free mozzarella cheese
- 2/3 cup skim milk
- 1 cup finely crushed Corn Flakes
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon ground black pepper
- 1 teaspoon of this spice
- 1/2 teaspoon salt
- 1 can (10.75 ounce) Campbell’s Healthy Request Cream of Chicken Soup – unprepared
- 1/2 cup fat free sour cream
- Juice of half a lemon
- Preheat oven to 350 degrees.
- Pound out chicken breast halves to about a 1/4 inch thick.
- Sprinkle salt and pepper on the chicken breasts.
- Place a slice of ham on top of each breast and about 3 tablespoons of cheese down the middle of each breast.
- Roll up each breast and tuck in the ends and secure with toothpicks.
- Pour milk into a bowl which will be easy to dip the breasts in.
- On a plate, combine the finely crushed corn flakes, smoked paprika, and Italian seasoning. You can mix in a bowl and then pour on a plate as well.
- Take each breast, roll in the milk and then roll in the corn flake mixture.
- Coat a baking dish with cooking spray.
- Place chicken breasts in baking dish and bake at 350 degrees for 25-30 minutes or until meat thermometer reaches 165 degrees Fahrenheit.
- When chicken is almost cooked through, mix the soup, sour cream and lemon juice in a skillet and warm through.
- When chicken is finished baking, remove from oven and remove toothpicks.
- Serve each breast with two tablespoons of cream sauce.
