Fall has started here in Wisconsin and I’m busier than ever, so I was trying to think of meals we could have as a family made in the slow cooker.
I am, we are, sick of the same old stuff that we typically eat, and we’ve been falling into a funk with our food prep and healthy choices lately.
We’ve had football practice and games, and both my husband and I work full time, so when we run out of time it seems like we are falling off the healthy eating train and jumping on the takeout train, which can be detrimental for success on this program.
We do often make a ranch chicken taco recipe in the Crock Pot, but we are getting sick of that, so when I had a reader reach out and ask for a healthier version of fiesta chicken, I thought it would be a great time for me to create this delicious Weight Watchers Fiesta Chicken recipe.
This recipe is great because it’s a dump it all in kind of recipe.
There is nothing better on a chilly, busy, night than coming home to a cooked meal!
This Weight Watchers Fiesta Chicken recipe is relatively easy to make.
Most of the time is spent chopping the green peppers and onions, otherwise everything is pretty much just thrown in.
You start by putting two pounds of chicken breast in the bottom of the slow cooker.
I have been using the Crock Pot plastic liners, but then I started to worry about the chemicals from the plastic seeping into the food, so I started just spraying the pot with the olive oil spray I get.
I have to admit, the plastic liner is much easier for clean-up though.
Use your discretion, if you’d like to use the liner, go ahead and do so.
Once you have put the two pounds of chicken into the pot, you then add the black beans, diced tomatoes, corn, green chiles, onions, green pepper, cilantro, spices, and cream of chicken soup.
Cover it up, set it on low, go to work (or wherever you want), and come back to a delicious hot meal.
Towards the end of the cooking, you cube up the 4 ounces of Neufchatel cheese, let it melt in for about 12-15 minutes, mix it up, and enjoy!
This is a great dish to eat as the meat for tacos, or you can make some delicious quesadillas too!
All you have to do is grab a low point tortilla, spread the chicken on there and any toppings you’d like in your quesadilla, fold it over, and brown in a pan.
How did I make this recipe more WW friendly you ask?
Well, with the new Personal Points program, everyone has a different plan, so it’s hard to make this a friendly as I used to, but we know the main low point foods after doing this for years.
First, my regular recipe called for regular cream of chicken soup.
Regular chicken soups are delicious, but in a recipe with all the flavor like this one has, using 98% fat free cream of chicken soup works just as well and cuts some of the fat down, so it helps to lower the points.
Another thing I did was substitute Neufchatel cheese in place of the cream cheese.
I also halved the amount of cream cheese that is typically put in this dish.
In my opinion, this lightened up version tasted just as good, but yet it isn’t as harsh on the waistline, and leaves us points for something else to eat!
What really makes this recipe great though, is that most of the ingredients are already zero points, so that sets a good baseline for the recipe.
Lean meat like chicken is always a good option to keep the smart points low.
You can trim the chicken fat off if you’d like.
That is an easy way to keep it healthier.
It’s probably the best practice, but sometimes if I’m in a hurry, I don’t bother.
You can also put the chicken in the slow cooker frozen since this meal simmers all day.
You can put the Crock Pot on high for 5 hours instead of low if you’d like it sooner – just make sure that the chicken is cooked through to a temperature of at least 165 degrees.
If you’d like to add different spices, feel free.
You could add chili powder, taco seasoning, different kinds of bell peppers, 1 cup salsa, chicken broth, green onions,
Spices typically don’t change the points value, but if you change it up, it’s always a good idea to put everything into the WW app recipe builder and see what your new points would be.
Actually, since the Weight Watchers Program changed to the new Personal Points program and is different for everyone, it’s a smart idea to put this recipe into your WW app recipe builder anyway, just to make sure you’re tracking the correct number of WW points.
This recipe makes about 24 servings, which is a lot, so feel free to halve the recipe if you don’t need so much.
However, at 1 point per 1/2 cup serving, you could eat on this all week long and really be versatile in how you use the leftover chicken mixture.
This recipe is the perfect option if you are looking for a meal that will leave you with lots of leftovers.
It’s great on salads as a delicious taco salad too with tortilla chips or tortilla strips, over a bed of brown rice, burrito bowls, or you can eat it just as is!
There’s so much of this mixture that you could even get creative and use it in a fiesta chicken casserole, which you could create.
Or create a new soup recipe for slow cooker fiesta chicken soup!
Another spin could be if you have some leftover rotisserie chicken, to shred that up and cook the ingredients on medium-high heat in a pan on the stove as a quick and similar dinner.
This is one of those healthy recipes that my whole family approves of, and I have two picky young children!
I made this on a Friday, and my older son said, “Mama, what day is it? Is it taco Tuesday?”
I told him no, that it was Fiesta Friday!
He told me that he was excited that there was an extra day in the week where we could have tacos.
I explained that in this house we don’t discriminate on days of the week, that tacos are a great meal any day of the week 🙂
Weight Watchers Fiesta Chicken Recipe Ingredients:
- 2 Pounds of boneless skinless chicken breasts
- 1 (15 oz) can of Black Beans
- 1 (15 oz) can of diced tomatoes (do not drain)
- 2 cups of this ingredient – clicking here helps support me and the time I took to create this post
- 1 (4 oz) can of diced green chiles
- 1/2 cup chopped cilantro
- 1 cup diced onion
- 1 cup diced green pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 (10.5 oz) 98% Fat Free Cream of Chicken Soup
- 4 oz of Neufchatel Cheese (this is found in the cream cheese section, sold in 8 oz blocks)
Weight Watchers Fiesta Chicken Recipe Directions:
- Line or spray slow cooker with liner or nonstick spray
- Add chicken to bottom of the crockpot
- Add the rest of the ingredients, but not the Neufchatel Cheese yet.
- Cook on low for 8 hours or on high for 5 hours.
- About 15 minutes or so before done, add cubed Neufchatel Cheese.
- Make sure chicken temperature is at least 165 degrees before serving.
- Shred chicken (easiest way is to use hand mixer)
- Enjoy!
