Skinny Mexican Flautas

I’m sorry I’ve been gone so long. I had TONS of stuff going on this summer and well…the blog took a backseat. 

Here’s an update…I’m expecting!

In 3 months (or sooner) I’ll have another bundle of joy in my arms! Can’t wait. 

I literally can’t wait. I’m getting bigger and bigger by the minute. 

Here’s the good part, though!

I’ve only gained 3 pounds so far! 

I was a little concerned at first, but as I stated earlier, I’ve been a busy bee, so it doesn’t surprise me. 

I have been trying to really watch what I eat, but it doesn’t help that I’m still feeling nauseous 75% of the time. 

Anyways, I also had a lot of curriculum and planning work to do for my full time job and I just didn’t have time to document my cooking adventures.

But…that ends today!

This morning I made some skinny Mexican Flautas that we DELICIOUS!!!

They really hit the spot for me this time.  

It will become a breakfast staple, that’s for sure. 

I’ve always loved flautas. 

Deep fried anything is sure to please. 

My mother in law makes delicious flautas and I’m so happy I’ve found a way to make a crispy flauta without the grease and calories!

I had some spicy turkey sausage in the freezer that needed to be used up so my brain started thinking about what I could use it for. 

I had a conversation with my husband last week about something his mother makes for breakfast called “migas”. (I think that’s how you spell it. That’s at least how it’s pronounced. )

I love that dish and wanted something similar so I started scouring my pantry because I didn’t really feel like going to the store, even though I ended up going anyways. 

So, I threw together some eggs, sausage, green chilies, onions, cheese and baked them in corn tortillas and they turned out SO GOOD so I knew I had to hop on here and finally write a new post you’d enjoy. 

First and foremost, if you’re thinking about making this, make sure you thaw your sausage if you have it frozen. 

I’m thankful that I pulled out the frozen block of sausage last night. 

First you want to cook the sausage in a frying pan until cooked through. 

It smelled SO good while I was breaking it up. 

Did you know that a potato masher like this one works so well for frying up ground meat? Super easy!

While the meat was cooking, I scrambled up 4 large eggs in a bowl and added some salt and pepper. 

While the eggs were cooking, I added the green chilies.

Talk about smelling good!

When the meat was cooked through, I added the eggs and half of the chiles, along with the cream cheese and half of the shredded cheese. 

I mixed that all together and came up with this creamy goodness of filling that would soon be rolled up into the tortillas. 

I sprayed a small frying pan with non stick cooking spray and warmed each tortilla before filling. 

I took one tortilla and filled with two heaping tablespoons of the sausage/egg mixture before rolling up and placing in a baking dish sprayed with non stick cooking spray. 

After I had them all filled, I used the rest of the chiles and poured them down the middle of the rolled tortillas. 

I then sprinkled the rest of the shredded Mexican cheese over the top and popped them in the oven.

They came out exactly like I wanted them to and the house smelled so good!

I topped mine with sour cream, cilantro and green onions. 

I have to say this was hubby approved and he said they are very similar to the fried flautas!

That’s a win in my book, coming from my half Mexican hubby 🙂

Skinny Mexican Flautas

Ingredients:

18 Yellow Corn Tortillas 

1 Pound Breakfast Turkey Sausage – Hot or Mild  – Your choice!

4 Large Eggs

1/2 of a can of this ingredient – click here to view

2 TBS Fat Free Cream Cheese

1/2 Cup Shredded Fat Free Cheddar

1/4 Yellow Onion Chopped

Cilantro (optional)

Green Onions (optional)

Servings: 18 flautas 

1 Serving = 1 flauta

Add 2 Tablespoons Fat Free Sour Cream as a topping for 1 additional point

Directions:

Preheat oven to 375 degrees. 

Cook sausage over medium high heat until cooked through. 

While sausage is cooking, scramble the eggs and cook through. 

Mix eggs into cooked sausage, add can of chilies/tomatoes, cream cheese, 1/2 of the shredded cheese and yellow onions. 

Mix well until combined and cheese is melted. 

Warm tortillas one by one over heat until warm. 

Fill each tortilla with two TBS of the sausage/egg mixture, roll, and place in a baking dish sprayed with non-stick spray. 

Spoon remaining chiles/tomatoes over the middle of the flautas, and top with remaining shredded cheese. 

Once pan is full of flautas, place in the oven for 30-35 minutes, depending on your preference of crunch. I like mine a bit brown. 

Remove from oven once completed baking and serve immediately. 

Top with 2 tablespoons of fat free sour cream for one additional point. 

Top with chopped green onions or cilantro, or both!

Yield: 18 Flautas

Skinny Mexican Flautas

Cook Time 40 minutes
Total Time 45 minutes

Ingredients

  • 18 Yellow Corn Tortillas
  • 1 Pound Breakfast Turkey Sausage - Hot or Mild - Your choice!
  • 4 Large Eggs
  • 1/2 of a can of Rotel Tomatoes and Chilies
  • 2 TBS Fat Free Cream Cheese
  • 1/2 Cup Shredded, Mexican, Reduced Fat Cheese
  • 1/4 Yellow Onion Chopped
  • Fat Free Sour Cream (optional)
  • Cilantro (optional)
  • Green Onions (optional)

Instructions

    1. Preheat oven to 375 degrees. 



2. Cook sausage over medium high heat until cooked through. 



3. While sausage is cooking, scramble the eggs and cook through.
